Recipe: sweet potato and broccoli quiche with brown rice crust

Ingredients:
  • 1 cup brown rice
  • 1 sweet potato, chopped
  • 1 cup broccoli, chopped
  • 8 eggs
  • 1/2 cup milk
  • 2 tbsp olive oil
  • Salt and pepper to taste
Make 1 cup brown rice according to package instructions.
Meanwhile, boil 1 chopped sweet potato and about a cup of chopped broccoli. Drain.
Grease a pie dish with olive oil.
Spoon rice in and press in pan to make crust.
Cook crust in oven for 5-7 mins on 425F.
Take crust out and add vegetables on top.
Add egg mixture: 8 eggs, 1/4-1/2 cup milk, olive oil, salt and pepper to taste.
Bake in oven at 400F for 15-20 mins.
