Recipe: Baked Polenta with Tomato Sauce

Sugar-free - Gluten Free - Vegan - Vegetarian

Ingredients:

  • 1 tbsp olive oil

  • 1 tube of polenta. I use Trader Joe's brand.

  • 1 can of tomato sauce. I used Trader Joe's brand which does have some seasoning added but no sugar. Tomato sauce is tricky--always read the label for added sugar.

  • Salt, pepper, oregano, basil, and garlic as desired

Directions:

  • Coat baking pan bottom with olive oil

  • Slice polenta cylinder into 12 slices and arrange them in a baking pan

  • Cover in tomato sauce and herbs and spices

  • Bake in oven at 375F for 30 minutes.

Variations:

  • Add feta cheese (no longer vegan)

  • add frozen broccoli around the edges

  • if you use fresh garlic, sauté it in olive oil first before adding it and baking the dish
