Recipe: Chocolate Peanut Butter Cups (low added sugar)

Low added-sugar - Paleo - Primal - Vegan - Vegetarian - Organic - Fair Trade

Ingredients:

  • 2 bars 85-95% organic Fair Trade chocolate*

  • 1 tsp vanilla

  • 1/2 jar of unsweetened peanut butter

  • 1/2 to 3/4 cup of coconut flour

  • 4 tablespoons maple syrup

  • 3/4 stick of butter

  • wax paper

Directions:

  • Combine all ingredients except chocolate in a bowl and blend with a hand mixer or food processor

  • You should be able to roll nickel-sized pieces into a ball and have them mostly maintain their shape. If more flour is needed, add it.

  • Roll all the dough into little balls

  • Melt the chocolate in a saucepan on low heat until just melted then turn heat off

  • Drop one peanut butter ball into the chocolate and coat with melted chocolate. Remove with a spoon and place on a baking sheet with wax paper

  • Repeat until all chocolate coating is gone. If you have extra chocolate you can use the spoon to pour more onto the balls.

  • Freeze for 1 hour or refrigerate for several hours before enjoying.

*I use 95% Thrive Market brand or 85% Alter Eco brand. These do have sugar cane but it's a small amount and these chocolates don't taste too sweet.
