Recipe: Blueberry Lemon Poppy Seed Muffins (sugar-free)
Sugar-free | Vegan and dairy free options
I have been baking Blueberry Lemon Poppy Seed Muffins all summer trying to perfect the recipe. I believe this one is it!
I wanted to know just how much morphine is in poppy seeds. According to Wikipedia:
"Although the drug opium is produced by "milking" latex from the unripe fruits ("seed pods") rather than from the seeds, all parts of the plant can contain or carry the opium alkaloids, especially morphine and codeine. This means that eating foods (e.g., muffins) that contain poppy seeds can result in a false positive for opiates in a drug test. However, the results provided will not be the same for someone who uses opiates.[19][20]
Ingredients:
2 1/2 cups all-purpose white unbleached flour
1/2 cup whole wheat flour
1 tablespoon baking powder
1/2 tsp salt
1 stick of butter, melted (8 tbsp)*
4 dates, chopped
1 very ripe banana
lemon zest of 1 lemon (or 1/2 tsp lemon extract)
lemon juice of 1 lemon
1/2 cup plain yogurt*
2 cups milk of choice (I used hazelnut)**
2 eggs*
1/2 cup poppy seeds
3 cups fresh blueberries
Instructions:
Pre-heat oven to 375F.
In a large mixing bowl combine flours, baking powder, salt, and poppy seeds.
In a food processor blend dates, banana, eggs, lemon juice, lemon zest, yogurt, and milk.
Add wet ingredients to dry along with blueberries. Stir gently until just combined but not too much.
Grease a muffin tin and fill up to the very top to get puffy looking muffins. Makes 18.
Bake for 25 mins or until the tops are golden brown.
Notes:
*To make vegan, substitute coconut oil for butter, omit the yogurt and add milk, maybe 1 tbsp of apple cider vinegar, and substitute ground flax seed eggs for the eggs
**The milk I add is an approximation. I typically add more a little at a time until the right texture of the batter happens
