Recipe: Tomato Goat Cheese Quiche
Sugar-free | Vegetable Oil-free | Vegetarian
I used this recipe from King Arthur Baking for the pie crust but made the following changes:
Omitted the sugar
Used salted butter and omitted the salt
Used the whole egg in the crust instead of using half in the crust and brushing on the other half
Combined butter and flour in a food processor
Ingredients:
8 eggs
1 4oz log of goat cheese, crumbled
1/4 cup whole cream
2 TBSP olive oil
Salt, pepper, or other herbs to taste
2 medium tomatoes
Directions:
Make pie crust and roll out. I used a 2QT (7x11) Pyrex baking dish. Bake at 400F for 10 mins.
Combine eggs, cream, olive oil, and any desired herbs/spices. I use 21 Seasoning Salute from Trader Joe's, salt, and black pepper. I combine in a food processor.
Pour eggs over the crust.
Add tomato slices evenly throughout in quiche.
Add crumbled goat cheese evenly throughout.
Bake for 20 to 30 minutes or until the quiche is set.
Let cool for 10 minutes. Enjoy!
