Recipe: Chocolate Cherry Cookies or Don't Go to the Grocery Store During COVID-19 Cookies (sugar-free)
I wanted to make cookies using only the random items I already had in my pantry, fridge, and freezer. So here are the most random cookies I have ever made!
Preheat oven to 350F.
Dry Ingredients:
3/4 cup oat flour (I make this by putting oats in a food processor)
1 cup unbleached flour
1/2 cup coconut flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
Combine in bowl.
Chocolate Chips:
1/4 cup raisins (or dates or other dried fruit)
2 tbsp unsweetened cocoa powder
2 tbsp unsweetened cacao nibs
1 spoonful of coconut oil
1/4 cup walnuts
1 pinch or a partial dropper of stevia
Pulse these in a food processor until they have the approx consistency of chocolate chips.
Wet ingredients:
1 1/4 ripe banana
1/2 cup frozen cherries or cherries
2 tbsp coconut oil
2 eggs
1/2 cup apple juice
Blend in blender or food processor until smooth. Use less or more apple juice as needed to blend everything.
Combine dry and wet ingredients in bowl. Fold in chocolate chips.
Make 1" diameter balls of cookie dough and arrange on a baking sheet. Smash them flat with a fork in two directions to make a criss-cross pattern on top.
Bake for 8 minutes.
