Recipe: Chocolate Sweet Potato Brownies (sugar-free)

Dry Ingredients:

  • 2 cups white unbleached flour

  • 1/4 cup coconut flour

  • 1/4 cup plain unsweetened pea protein or other protein powder

  • 3/4 cup unsweetened cocoa powder

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp salt

Combine and stir in a large bowl.

Wet ingredients:

  • 2 cups of chopped steamed sweet potato

  • 1 stick (1/2 cup) of salted butter, chopped into pieces

  • 1 tsp vanilla

  • 2 eggs

  • 3/4 cup 100% juice apple juice

  • 1 1/2 cups almond milk or milk of choice

  • 1/4 cup real maple syrup (not refined sugar-free) OR 1/2 cup of dates or prunes, blended (refined sugar-free)*

  • 1/2 cup frozen blueberries

Chop sweet potatoes and steam until very soft. Blend them with apple juice until completely blended. Add butter and blend. If the sweet potatoes are still warm, that will help the butter melt. Add vanilla, eggs, sweetener (either maple or dried fruit), milk, and blend until smooth.

Add to dry ingredients bowl and stir. Add in frozen blueberries.

Grease a 9x13 baking pan with butter. Pour in batter.

Bake at 350F for 30 mins.

Fork may not come out totally clean from the middle due to the sweet potatoes and how that affects the texture. Let them cool before eating.

*I have used prunes and dates in the past and that's my preference as a sweetener. But in this case I didn't have any dried fruit in my pantry and I did have the tiniest amount of maple syrup left in my fridge so I used that instead. If you use dried fruit, you may need to add more milk or apple juice for the right consistency.
