Recipe: Sweet Potato Goat Cheese Quiche

I followed this quiche crust recipe. I did bake it for 7 minutes before adding other ingredients and putting it back in the oven.

Ingredients:

  • 1 quiche crust (See above)

  • 2 medium sweet potatoes, chopped

  • 2 yellow onions, chopped

  • 2 TBSP olive oil

  • 5 eggs

  • 2 TBSP milk

  • 1 small log of goat cheese

  • Salt and pepper to taste

Instructions:

  1. Boil the chopped sweet potatoes until they're soft. Drain and set aside.

  2. Sautee the onions in olive oil until soft. Set aside.

  3. Prepare the quiche crust. Use a pie pan or a springform pan or whatever you feel like.

  4. Add onions and sweet potatoes on top of the pie crust.

  5. Crumble the goat cheese on top.

  6. Whisk or blend together eggs, milk, and salt and pepper to taste. Use other seasonings as desired.

  7. Pour egg mixture over the top.

  8. Bake at 350F for 30 min - 40 minutes or until the center is set.

Cool and enjoy! Also delicious cold the next day.
