Recipe: sugar-free chocolate banana peanut butter waffles or pancakes
Ingredients:
- 1 banana
- 3 dates, pitted
- 2 1/4 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsweetened cocoa powder
- 2 1/2 cups almond milk
- 2 eggs
- 2 tbsp coconut oil
- 2 tbsp peanut butter
Combine banana, dates, milk, eggs, coconut oil, and pb in food processor until blended.Combine dry ingredients in a glass or metal bowl.Add wet ingredients and combine but don’t over stir. Add more milk if needed until the right waffle or pancake batter consistency is achieved.Pour half a cup in a waffle maker (amount will vary depending on waffle maker).Waffles are pictured but can also be made as pancakes.Stores well in the refrigerator for later use of leftover batter.Serve with any of the 8 pancake/waffle toppings that aren't sugary syrup.
