Recipe: sugar-free ginger cinnamon sweet potato pancakes
Ingredients:
- 1 large/extra-large sweet potato (or 2 medium, or 3 small)
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon powder
- 1 tsp ginger powder
- 2 to 2 1/2 cups milk
- 2 eggs
- 2 tbsp coconut oil
Cut sweet potato into chunks and steam until soft approx 20 minutes.Combine sweet potato, milk, eggs, and coconut oil in food processor until blendedCombine dry ingredients in a glass or metal bowl.Add wet ingredients and combine but don't over stir. Add milk until the right pancake batter consistency is achieved.Grill on pancake griddle approx 4 mins on each side. Spray with coconut oil spray if needed to prevent sticking.Stores well in the refrigerator for later use of leftover batter.Top with any of these 8 pancake or waffle toppings that aren't sugary syrup.
