Recipe: Sugar-free frozen coconut pecan cookies

 Ingredients:

  • 10 dates, pitted
  • 1/4 cup shredded coconut
  • 1/2 cup pecans
  • 3 heaping tbsp coconut oil

Prep Time:

  • 15 minutes

Freeze Time:

  • 15 minutes to overnight

Combine in a food processor. If too oily, add more pecans or coconut. If too dry, add more coconut oil.The mixture will be slightly crumbly.Spoon and roll into balls and put on a baking sheet covered in wax paper.Freeze for at least 15 minutes before eating. For most perfect cookies, freeze over night.Enjoy!
