Recipe: Apricot Nutmeg Cake (sugar-free)

Sugar-free | Vegetable-oil free | Organic | Dairy-free

My mom and I bought these apricots this weekend direct from a local organic farm: Gopher Glen in Avila Beach, CA.

This recipe makes two cakes, as pictured.

Ingredients:

  • 2 1/2 cups flour

  • 3 tsp baking powder

  • 1/4 tsp salt

  • 2 tsp nutmeg

  • 2 large very ripe bananas

  • 4 very ripe apricots, plus 10 apricots sliced in half for top

  • 1 cup coconut oil, melted

  • 4 eggs

  • 2 tsp vanilla

  • 1 cup almond milk

Directions:

  1. Combine flour, baking powder, salt, and nutmeg in a large bowl.

  2. Blend bananas, 4 ripe apricots, oil, eggs, vanilla, and milk in a blender or food processor.

  3. Mix the two together gently.

  4. Grease two baking dishes with coconut oil: pictured is a 9" glass round pie dish and a small glass rectangular baking dish (smaller than the standard 9x13" ones).

  5. Pour cake batter into dishes. Push sliced apricots into top.

  6. Bake at 350F for 45 mins or until the top is golden brown.

  7. Best enjoyed after it has cooled.
