Recipe: Baked Sweet Potato Coins
Ingredients:
- As many sweet potatoes as your heart desires!
- Olive oil
- Salt and pepper
Directions:
- Slice sweet potatoes into thin coin shapes
- Put in a glass bowl
- Coat with olive oil, salt, and pepper
- Stir
- Put coins on baking sheets, one layer only
- Bake in the oven at 375F for about 30 mins until they brown
Serve with mustard, ricotta cheese (pictured), or hummus to keep them sugar-free.Alternate seasoning: cinnamon, turmeric, cumin
