Recipe: Baked Sweet Potato Coins

Ingredients:

  • As many sweet potatoes as your heart desires!
  • Olive oil
  • Salt and pepper

Directions:

  • Slice sweet potatoes into thin coin shapes
  • Put in a glass bowl
  • Coat with olive oil, salt, and pepper
  • Stir
  • Put coins on baking sheets, one layer only
  • Bake in the oven at 375F for about 30 mins until they brown

Serve with mustard, ricotta cheese (pictured), or hummus to keep them sugar-free.Alternate seasoning: cinnamon, turmeric, cumin
