Recipe: Mason Jar Chia And Chocolate Protein Pudding (sugar-free)

Sugar-free | Vegan Option

Before making this, I wondered if making it in a cute mason jar would make it taste better. I'm pretty sure, yes! Cute things are better.

I didn't exactly measure everything out so these measurements are my best guess. I eye-balled everything.

Chia Pudding Ingredients:

  • 4-5 TBSP chia seeds

  • 1/2 cup of hazelnut (or other nut) milk

  • 1 pinch of stevia

  • 1/4 tsp vanilla

Directions:

  1. I poured them all into the mason jar first and stirred then let the chia seeds gel and set for about 1/2 an hour. You can also refrigerate overnight or for several hours if you want it to be cold.

Chocolate Pudding Ingredients:

  • 1/2 frozen banana

  • 1/4 cup raisins

  • 2 TBSP unsweetened whole whipping cream*

  • 1 serving (2 scoops) pea protein powder

  • 1/2 serving (2 TBSP) hemp protein powder

  • 2 TBSP unsweetened Fair Trade cocoa powder

  • 1/4 cup hazelnut (or other nut) milk

Directions:

  1. Blend. I blended in a nutribullet blender.

  2. Scoop out with spatula and add to the top of the gelled chia pudding.

Whipping Cream* Ingredients:

  • 1/4-1/3 cup whole whipping cream

  • 1/4 tsp vanilla

  • 1 pinch stevia

Directions:

  1. I put these all in a food processor and blended until whipped

  2. Then I scooped it out with a spoon and topped with cacao nibs and dusted with cocoa powder

Enjoy!

*To make vegan, omit the whipping cream!
