Recipe: Sugar-free Zucchini Bread

First off, I made two versions: one with raisins and one without raisins and it was no comparisons. So, so much better with raisins.

  • 10 dates, pitted
  • 4 tablespoons water
  • 1/2 cup olive or coconut oil
  • 3 large eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 heaping teaspoons cinnamon
  • 2 cups flour
  • 2 cups shredded zucchini
  • 3/4 cup raisins

Blend dates with water, oil, eggs, and vanilla in a food processor.Mix the dry ingredients together.Pour the wet ingredients and raisins in with the dry ingredients and stir but not too much.Scoop into a greased bread pan.Bake for 50-60mins at 350F. Err on overcooking because otherwise the zucchini can come out soggy.I shredded the zucchini with my Cuisineart food processor. Could be hand-grated like cheese.I will probably make this again with banana blended with the dates to make it a little sweeter. Like a combo banana-zucchini bread.Butter is my favorite food. The zucchini is fresh from our garden. We have so much of it! Making zucchini everything.
